How to create an own "category selector" for Edit mode?

Hello. I'm working on a site wich has quiet a bunch of categories and some of the new items that are created shall be applied to ALL of these categories (actual "regions" on a company).

Is there a way to override the default category checkbox-listning under the Category-tab so that I can add functionality to allow the editor to select all categories by just clicking a button.

It's not the "Select all..." functionality per say that's the problem but the best practice on how to override the default category selector in Edit mode.
