I found the answer to the second question. It's in the table called SerializableCart.

It actually depends on wwhich cart mode you are using. However as a rule of thumb we don't disclose the database schema.
My memory is a bit rusty now but to display those fields you would need to modify CM. Modifying CM, unfortunately is not something officially supported. Showing the fields in the order list is easy, but showing them inside the order detail is not trivial

I have added a couple of custom meta fields to my Commerce Manager carts. These fields are set in the cart, as the customer goes through the checkout flow. From code I can retrieve these meta values, so that part works fine. But if I go to Commerce Manager to look at the cart or order content, I cannot see these meta values. Is there any way I can see these from Commerce Manager?
In which database table are these meta values stored for a cart/order?
